Brewing Green Tea
An Art Form That's Easy To Master

If you're frustrated with brewing green tea that turns out bitter, you just need a few tips to brew the perfect cup every time.

How you brew green tea depends on what kind of green tea you are using, this is because the quantity of leaf tea you use and water temperature will vary from one green tea to another

You should also try to use purified water if you can - this will also help stop the bitterness.

Brewing Sencha Green Tea

Brewing sencha
  • Allow 1 heaped teaspoon (approx. 5grams) for 240mls (8 oz.) of water. Buy fresh Japanese sencha here.
  • The temperature of the water should be between 70-80 degrees C (165-176 degrees F).
  • If possible use a small teapot (holds about 240mls/8oz.) of water, and 2 small teacups.

1.Pour desired amount of just boiled water (eg. 240mls) into the teapot. Leave it for about 30 seconds.

2.Then pour the water from the teapot into 2 small teacups.

3.Put desired amount of tea leaves into the teapot (eg. 1 tsp.).

4.Then pour the water from the teacups back into the teapot (this has allowed the water to cool to around 70 degrees C.

5.Steep for 2minutes before serving.

Please note: If you are using regular grade sencha, the steeping time should be about 1 minute.

Brewing Gyokuro Green Tea

Brewing gyokuro
  • When you brew gyokuro you should use 2 heaped tsps. instead of one for 240mls (8oz.) of water. Buy premium Japanese Gyokuro green tea here.
  • The temperature should be between 50-60 degrees C.
  • The steeping time should be 2-3 minutes.

Follow the above instructions for sencha, taking the above information into account. Allow the boiling water to heat the teapot for about 1 minute, and also heat the teacups for a little longer than when making sencha. This will allow the temperature to drop to about 50-60 degrees C. Brewing Genmaicha, Hojicha and Bancha

Brewing matcha
  • When you brew green tea like bancha, hojicha and genmaicha allow 1 heaped tsp. per 240mls (8oz.)
  • You should use just boiled water.
  • The steeping time should be 15-30 seconds.
