Green tea is produced mainly in Japan and China. Whereas white tea is almost entirely produced in China in the Fujian Province.
The main difference between green tea vs white tea is in the harvesting and production of the two teas.
White tea consists of the first few tender leaves and new buds of the tea bush.
Whilst green tea consists of leaves that have matured.
The harvesting of white tea takes place in early Spring over a short period of 1-2 weeks.The harvesting of green tea has a much longer harvesting period. And pickings can take place between 3 or 4 times a year.
After picking the leaves are naturally dried and not rolled like green tea.
White tea is
high in antioxidants
because it is minimally processed. Green tea also has a high antioxidant content because the leaves are not oxidised and fermented like black tea.
